Happy Monday! Kicking off your week with some homemade Rice Krispie Treats today, which might be a thing from your childhood – but now you can make them right at home and enjoy them at any time! This recipe deviates a bit from that on the back of the Rice Krispie cereal box, but they’re still just as sweet and chewy.

I had a terrific (while hectic) birthday weekend! Moving out of my apartment was a success after the extensive packing, cleaning, loading my car, unloading my car, etc., and now I’ll be living with my parents in the mountains for a few weeks until I can move into the coolest townhouse in Denver! I made these adorably mini pancakes during the week leading up to the move and they fueled Sean and I for sure – but they were also a bit time consuming and required just enough focus to calm my mind down from moving stresses.

I decided to make these last week when our apartment was half packed up and the oven needed to be cleaned. This recipe just requires a stovetop, a pot, and a spoon, so it is pretty no-fuss when it comes to equipment needed. And now that it’s surely warm out there, I’m not always inclined to turn the oven on and heat up the kitchen further – well, Rice Krispie Treats don’t require an oven, just another reason that they’re such a perfect snack or dessert for the summer. Hopefully I’ve convinced you by now: it’s time for homemade Rice Krispie Treats for your next cookout, picnic or day at the lake or beach this summer!

I’ll keep this blog short today since Rice Krispie Treats are quick and easy to put together. I honestly think the most intensive part of this recipe is cleaning your marshmallow-y pot once you’re done. (A couple tips on cleaning: try to scrape as much of the marshmallow mixture as possible out of the pot before cleaning – the less sticky, the better. Also, if you do have some marshmallow residue left in your pot and it dries on a bit, fill your pot with hot soapy water and just let it soak for 30 minutes to an hour. It should clean up fairly easy with a sponge from there!)

Of course, don't forget that sprinkles can, and arguably should, be added to a lot of my recipes. If you want to add some colorful jimmies to these Rice Krispie Treats, please FEEL FREE! Either add them to your rice cereal and mix them all throughout the treats, or sprinkle them on top right once you've smoothed out the marshmallow-rice cereal mixture in the pan.

The Recipe

Rice Krispie Treats

Homemade Rice Krispie Treats are easy to make, don’t require an oven, and are perfect to bring along to a summer picnic or day at the beach.

Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Servings: 12 to 16 servings


  • 5 tablespoons unsalted or salted butter
  • One 10-ounce to 12-ounce bag regular marshmallows
  • 1/2 teaspoon salt
  • 7 cups rice cereal
  • Sprinkles for topping, optional


  1. Line a 9 x 13-inch baking pan with parchment paper or grease well with butter.
  2. Melt the butter in a large pan over low-medium heat. Add the marshmallows and stir until completely melted. Add the salt and stir until the mixture is smooth and runny and remove from the heat. Make sure to stir consistently so the marshmallows do not burn.
  3. Add the rice cereal to the marshmallow mixture and gently fold until well combined. Pour into the prepared baking dish and press the mixture firmly and evenly for an even layer. Top with sprinkles if desired. Allow to cool completely before cutting and serving.
  4. Store treats in an airtight container for up to 1 week.
